So 70s, but somehow so now. Or is that just me? My hankering for prawn cocktail never seems to fade. The fact that it is rarely found on restaurant menus anymore is something that still saddens me. You can have your bruschetta and your mixed olives. I want a zingy prawn cocktail (with Hellmans mayonnaise), washed down with a glass of orange juice (a classic Beefeater combo I remember from childhood birthdays).
The good thing about this situation is that prawn cocktail is SO easy to make yourself, there is no excuse for missing out. Cooked prawns, tick. Ketchup and mayonnaise, tick. Lemon, tick. And it's simplicity means it's a winner with the kids. Actually, it's not the simplicity they love, it's the ketchup and mayonnaise. Stick it all on a little lettuce leave and you can feel like you're doing them a nutritional favour. Bonus!

Here's the recipe, but it's all to taste. Just put in what you prefer, tasting all the way.
250g ready cooked and peeled prawns
2 tbsp mayonnaise
2 tsp ketchup
squirt of lemon juice
lots of black pepper
Little gem lettuce leaves
Mix prawns with mayonnaise, ketchup and lemon juice. Add black pepper and serve on salad leaves.
