There is an art to a good cucumber sandwich. Ideally you should use white bread. If you're going the whole hog and making afternoon tea, save the brown bread for the smoked salmon. It should be lightly buttered, with unsalted butter and the cucumbers peeled and thinly sliced. If the seeds look very watery or you won't be eating your sandwiches straight away, scoop them out.
Then smack them in between the bread and cut the crusts off with a bread knife. Slice into fingers or triangles and eat with last week's scones (not literally, I mean use the recipe) and a smile. They couldn't be more simple to make, but here is a short film showing you how nonetheless.
