Might not be the first thing you think of doing today, in the baking sunshine, frying up some chicken nuggets. But bookmark this and save it for later. It's dead easy and so much more delicious than MaccyDs. Let us know what you think.
Serves: 2 grown ups
450g chicken breast or pack of mini-fillets which save time
150ml crème fraiche
150g breadcrumbs and semolina/polenta if you have it
Slice the chicken so the nuggets are about 7cm long and 2cm wide, but hey, we’re not measuring. Just try to keep them vaguely equal so the cooking time is the same.
Place the crème fraiche in a shallow container and the breadcrumbs in another one. Add salt and pepper to the breadcrumbs.
Dip the chicken first into the crème fraiche, and then in the crumbs. It’s very easy and quite satisfying. Place on a plate.
Heat enough oil to cover the base of a large frying pan. Place as many nuggets in the frying pan as you can, without having them touching. Fry for about 5 minutes, until they are golden brown, then turn. Fry for another 4-5 minutes, then cut the fattest one in half to check it’s cooked. If it is, use a fish spatula to remove the dippers from the pan and place on kitchen towel so the fat drains away.
Serve up the rest of the meal. Peas, mashed potato, ketchup (obv) and then put on the plate. Serve to deliriously happy children. And adults.
